FRIDAY COOKING: THE IDEAL COMMUNION DISH WITH NO SALT CHEF BRIAN McDERMOTT

This week with so many confirmation and first Communions in the area I thought it would be a great idea to give a recipe for a Beef Stroganoff. It’s ideal for a family get together.

The No Salt chef Brian McDermott

Beef & Mushroom Stroganoff – the Brian McDermott way!

This is an ideal One Pot Dish for any family function. Serves 4-6

Ingredients

400g Beef Strips
1 Onion Diced
5 Mushrooms Sliced or 15 Button Mushrooms
100 ml White Wine
250 ml Beef Stock
1 Table Spoon Paprika
1 Table Spoon Tomato Puree
1 Table Spoon Rapeseed Oil
2-3 Cloves Garlic Crushed
1 Lemon Juiced
Drop Worchester Sauce
Fresh Parsley
Crème Fraiche
Pinch Black Pepper

Method

Heat your pot dry add the Rapeseed Oil Add your beef pieces and brown on all sides.

Add Onion, Garlic and Mushroom and sweat for few minutes then add flour and tomato puree.

Season with pepper and paprika then add the white wine and reduce by half then add the stock.

Cook for 40 minutes on low heat until or until meat is tender then add in Worchester Sauce , lemon juice & fresh parsley and crème Fraiche.

Serve with Rice

Brian’s Tips: Feel free to add sweet peppers to this dish. Ideal dish also to be cooked in slow cooker.

Brian’s Top Tips: If making for a large party brown of your meat in batches rather than all at once to ensure your keep it tender.
